Back in 1128 Saint-Norbert ordered the construction of an abbey for the Norbertine monks (also known as "white canons") in the village of Grimbergen, located in the province of Brabant. Besides their contemplative and religious tasks, these monks immersed themselves in the art of brewing. The abbey was renowned for its hospitality and constituted a safe haven for many a pilgrim or traveller in those turbulent times. The Norbertine monks added to their hospitality by offering their home-brews to the guests. They displayed the greatest care and precision to improve their recipe and make it perfect. That same recipe was passed on by the monks/brewers for centuries. And it is with the same respect for tradition and quality that the top-fermenting beers of Grimbergen are still being brewed by Alken-Maes today. The Abbey of Grimbergen was razed to the ground by fire on several occasions, though rose from its ashes each time. The phoenix symbolises the abbey's resurrection and still features on the label today. The secret recipe of the Grimbergen beer was saved, however, and is still cherished and applied to this day.
